Summer is winding down; it’s a fact. But it doesn't mean the fun has to end.
We're sharing three delicious cocktail recipes to help you squeeze the most out of the rest of the season. Cheers to the cool weather, and all the outdoor opportunities that await you this fall.
This tropical beauty is just as delicious as it is aesthetically pleasing, with its grilled peaches, pineapple and lime. You don't need to use skewers to grill the fruit, but it does make things a little easier. Expert tip: If you use wooden skewers, be sure to soak them in water for about half an hour before using them.
-2 pineapple wedges
-1 sprig of rosemary
-¼ ounce simple syrup
-1 ½ ounces aged rum
-1 cup crushed ice
-Heat the grill on high heat for 10 minutes.
-Oil the grate.
-Place peach half, lime half and cubes of pineapple on the grill and rotate until the sugars start to caramelize showing grill marks. (Pineapple will take 3-4 minutes, peach and lime will take 7-9 minutes.)
-Remove fruit and let sit for about five minutes to cool down.
-Cut peach into pieces and muddle together with pineapple, lime and rosemary in the bottom of a glass.
-Remove the lime and add simple syrup.
-Add ½ cup of crushed ice to the glass.
-Pour rum over ice and stir briefly.
-Top with the remaining ½ cup of crushed ice and serve.
Tequila Thyme Sangria
-2 Tbls sugar
-4 oz tequila
-2 cup dry white wine
-Few sprigs of thyme
-Remove the nectarine seed and cut the fruit into ½ inch cubes.
-Pit the cherries and tear into pieces.
-Put fruit into a container with a sealable lid.
-Add sugar and thyme to the fruit and let sit for about 30 minutes, until the juices release from the fruit.
-Pour in the wine and tequila, secure the lid and let sit in the fridge or cooler for at least 2 hours (even better if it can sit overnight).
-Pour into glasses, and enjoy!
Passion Fruit Gin Grin
-1 passion fruit, halved with pulp removed
-½ of a lime, fresh squeezed
-½ ounce maple syrup
-1 ounce tonic water
-1 ½ ounces gin
-Scoop pulp and juice from the passion fruit into the glass.
-Add lime juice, maple syrup and gin.
-Swirl to mix.
-Top with ice and tonic water. Enjoy!
